Chanterelle Soup Revisited

Chanterelle Soup with Sour Cream

Chanterelles being one of my very very very favourite foods ever (they’re definitely in my Top5 favourite foods, even though I’m not sure what other 4 foods make the Top… I guess lemons and… what else..?), I couldn’t resist highlighting this recipe again. We wrote about Chanterelle soup as one of our first blog entries a year ago. We’ve already made it twice this summer, with a few tweaks, and I thought this lovely summer mushroom soup was worth mentioning once again.

Another super-addictive food I’ve had today was wild strawberries. I’m a wild strawberry maniac. Their scent, one of Nature’s sweetest and daintiest perfumes, makes me tremble. Unfortunately these tiny gems are quite expensive, so I don’t think I’ll have more wild strawberries this year… we’ll see. Perhaps it would be a sacrilege to, say, bake with them, but I’d love to try. I’ve had those delicious wild strawberry and cottage cheese tarts at a French bakery near my office, and they were oh so good!

Wild Strawberries

Chanterelle Soup recipe can be found here. This year we’ve been making it with 8 baby potatoes and no onions at all. Instead, we sautéed 2 carrots with a tablespoon of butter, and added them to the soup together with mushrooms. And, you can skip garlic if you prefer a milder flavour.

I love wild strawberries and I have some in my garden, I am going to pick them tommorow. :) But unfortunately I can only dream about fresh wild mushrooms, that are one of my favourites ingredients ever. Lovely soup, I am little bit jealous. ;)

Wow you have your own wild strawberries in the garden? fantastic!
Don’t you have any wild mushrooms at your local farmer’s market?..

      • Karolina says:

Yes, previous tenant left them, I have only discovered them last year under a layer of weed.

I have to ask, but wild mushrooms can be extremly expensive in UK. :/

wild strawberries are wonderful! your chanterelle soup looks amazing, so very very tasty!

    • Alina says:

Thank you so much Dennis!! yes wild strawberries are so delicious, such a shame they’re so rare and expensive here!

  3. I am so happy to have found your excellent blog! Your wonderful recipe for chanterelle soup is one that I definitely plan to make. My sister, a wild mushroom expert, frequently sends me some of her harvest of wild California chanterelles, which are very large and meaty. And I gather a different, very tiny and delicate, chanterelle in the woods near my home in North Carolina. Your recipe will finally do them justice, something I haven’t managed to date. Thank you so much for sharing your knowledge and ideas.

Oh Barbara and I’m happy I found your blog! :) thank you very much for your comment, I hope this recipe works out well for you - sometimes it’s all pretty unpredictable because ingredients are different in all countries! or even in different states, in your case! ;-)

Oh, Alina, this is true beauty! I love both chantereles and wild strawberries. My brother’s wife comes from Latvia and he and my mum were amazed by the amount of chantereles there. We usually cook them with little onion and butter, then add to scrambled eggs.

When I open up your Feed it seems to be a lot of nonsense, is the issue on my part?

  6. Everything is very open with a really clear
description of the challenges. It was really informative.
Your site is useful. Thanks for sharing!
