Petushok Lollipops

No, no, I didn’t make these, but I just wanted to tell you about one of the oldest Russian candies - Petushok (Cockerel) lollipops. It’s an all-natural candy made with just sugar, water, and a drop of vinegar essence. Plus maybe some honey (like the ones you can see in the picture). You can also buy cockerel lollipops at almost every craft or food fair in Latvia - they’re called Gailitis here. They taste of burnt sugar and are rustic-looking, amber golden in colour, and irregular in shape. No artificial flavourings, no colouring agents - if you come across a red or yellow lollipop, it’s not a right one.

I don’t basically like lollipops, but these I can’t resist. They’re so natural, they taste of childhood, and they’re beautifully translucent. I’m even thinking of making some Petushki at home, if only I find matching lollipop moulds!

  1. Whoa, I totally used to eat these as a child. Not a fan of lollipops either but I’m pretty sure I’d snag one of these if I saw it today :)

    That is sooo pretty! Why cockerels? Any significance to Russian culture? You know what? I’m just going to follow your blog and learn more about Russian food. Best way to learn about a culture…through the tummy!

      Ping, I don’t know why cockerels - I believe there also used to be fish-shaped, bird-shaped etc lollipops, but cockerels somehow survived through years :) Oh thank you so much for following, I’ve subscribed to yours as well!

    Would you happen to have a brief recipe for these??? Want to make them at home with family, and have been looking for a while for the recipie.

  4. Oh my goodness! I loved those! Babushki prodavali semechki and petushki on every corner :) I made some today, but just basic circles on a stick, they taste just like a childhood. Recipe: 2/3 cup of water, 2 cups of sugar (I used organic evaporated cane juice from Costco), 1/4 tsp cream of tartar. You can find videos on Youtube for step-by-step instructions. Following now!! Thanks!

    Red lollipops are not necessarily something “not right” - my mom used to make them red by adding a few drops of beet juice:)
    no effect on the taste, but the color was amazing!
